At Lancaster Craft, we know a thing or two about grain. For over 30 years, we've sourced, milled, mashed in and fermented grain of every type. Today, we proudly distill American Single Malt Whiskey and Rum along with limited amounts of Bourbon, Rye, Vodka, Gin and Brandy.
As we patiently await our house distilled whiskey to mature, we source barrels of aged whiskey from highly regarded distilleries in Kentucky, Indiana and Texas, and finish that spirit for 9 to 16 months in barrels used in the production of our award-winning barrel-aged beers. Our unique approach involves initial barrel tasting, then the creation of a detailed whiskey profile that keys in on isolated flavors, aromas, mouthfeel and finish. We follow by brewing a bespoke beer to highlight specific flavors in the whiskey, then age the beer in former rum, brandy or bourbon barrels.
After the beer reaches maturity (8-16 months) we refill the barrels with whiskey and wait, as long as it takes, to develop the unique characteristics we look for.
